Oggi ci troviamo presso il negozio di Mauro per un'occasione speciale. Abbiamo un vino Amarone unico che ha 51 anni. Questo vino è così speciale che se lo chiedete a Bertani, non lo hanno più disponibile. Si stima che valga 1000 euro ma di fatto ha un valore inestimabile. Le uve per l'Amarone vengono raccolte, essiccate e spremute a febbraio o marzo. Dopo il processo di vinificazione, viene invecchiato per 10 anni in barili di rovere. Oggi decanteremo il vino, che consiste nel lasciarlo respirare per un determinato periodo di tempo. Le bottiglie così vecchie hanno il tappo fragile, quindi utilizzeremo un sistema che è stato donato da Mario Pojer per togliere il tappo senza distruggerlo. La leggenda parla di un vino Valpolicella Recioto, che a causa di un errore nella cantina, è stato lasciaro li più del dovuto e tutto lo zucchero è stato consumato diventando un vino secco, dando origine al nome "Amarone". Adesso decantiamo il vino e apprezziamo il suo profumo.

Today we are at Mauro's shop for a special occasion. We have a unique Amarone wine that is 51 years old. This wine is so special that if you ask for it at Bertani, they no longer have it available. It is estimated to be worth 1000 euros but in fact it has an invaluable value. The grapes for Amarone are harvested, dried, and pressed in February or March. After the winemaking process, it is aged for 10 years in oak barrels. Today we will be decanting the wine, which involves letting it breathe for a set amount of time. These very old bottles have a fragile cork, so we will use a system that was donated by Mario Pojer to remove the cork without destroying it. The legend speaks of a Valpolicella Recioto wine, which due to an error in the cellar, was left there too long and all the sugar was consumed, becoming a dry wine, giving birth to the name "Amarone". Now we will decant the wine and appreciate its fragrance.
